Flat beans, yardlong beans, potato, broccoli, and cauliflower fry is a healthy and flavorful mixed vegetable bhaji perfect for everyday meals. Ingredients

  • 🥦 Vegetables:
    1 potato (cut into small cubes)
    Flat beans/hyacinth beans (cut into 2 pieces each)
    Carrot (cut into small cubes)
    Green peas
    Broccoli (cut into medium florets)
    Cauliflower (cut into medium florets)
    1 tomato (sliced)
    Spring onion / onion leaves (about 10 g, chopped)
    Fresh coriander leaves (for garnish)
    🧅 Aromatics:
    Chopped onion
    Chopped green chili
    Chopped garlic
    🌿 Spices:
    Red chili powder – ½ tablespoon
    Coriander powder
    Cumin powder
    Turmeric powder
    Green chili powder
    Salt to taste
    🛢️ Other Ingredients:
    Cooking oil – 4 tablespoons
    Water – about ½ cup

Directions

  • 1. Preparation Before Cooking
    Wash all vegetables thoroughly with clean water.
    Peel the potato and carrot, then cut them into small cubes.
    Cut the flat beans into 2 pieces each.
    Cut broccoli and cauliflower into medium-sized florets.
    Slice the tomato thinly.
    Chop the onion, green chili, garlic, spring onion, and coriander leaves separately.
    Keep all vegetables and spices ready before starting cooking.

    2. Start Cooking
    Heat 4 tablespoons of cooking oil in a pan on low flame.
    Add chopped onion, chopped green chili, and chopped garlic.
    Stir well and fry gently until the onion becomes soft and slightly golden.

    3. Add the Vegetables
    Add the cubed potato, flat beans, carrot, and green peas into the pan.
    Add the chopped spring onion as well.
    Sprinkle a little salt and mix everything properly.

    4. Add the Spices
    Add red chili powder, coriander powder, cumin powder, turmeric powder, green chili powder, and salt to taste.
    Mix all the vegetables well so the spices coat everything evenly.

    5. Add Broccoli and Cauliflower
    Add the broccoli and cauliflower florets directly without boiling them beforehand.
    Stir gently and mix everything together.
    Keep the stove flame on low throughout the cooking process.

    6. Cook the Vegetables
    Add about ½ cup of water.
    Cover the pan with a lid and cook for about 10 minutes on low flame.

    7. Add Tomato
    After 10 minutes, add the sliced tomato.
    Cover again and cook for another 10 minutes or until all vegetables become soft and tender.

    8. Final Step
    Add fresh coriander leaves.
    Stir gently and cook for another 5 minutes on low flame.
    Check whether all vegetables are fully cooked.
