Ingredients

  • 1 whole titir chicken (cleaned and cut into pieces)
    Bay leaves- 2pcs
    cardamom- 2-3 pcs
    Black Cardamom- 3 pcs
    Cloves 3-4 pcs
    Chinanmin- 3-4 pcs
    Turmeroc Powder- 1 tsp
    Red chili powder-2 tsp
    Cumin Powder-2tsp
    Coriander Powder- 2tsp
    Mix Masala- 2 pcs
    Salt to taste
    Onion, Garlic, and Ginger paste
    Cooking oil
    Onions – 1 cup
    Desi small Potatoes -20 gm

Directions

  • How to Cut Titir Chicken Pieces:
    Place the cleaned chicken on a cutting board.
    Hold the chicken firmly and use a sharp knife.
    First, cut the chicken into two main halves (if whole bird).
    Then divide each half into medium-sized serving pieces.
    Try to keep bone-in pieces for better flavor during cooking.
    Avoid very small pieces as titir chicken cooks better in medium chunks.
  • How to Clean (Wash) Titir Chicken:
    Take 1 whole titir chicken (partridge/game bird) or cleaned pieces.
    Remove any visible feathers carefully using your hands or tweezers.
    Wash the chicken under running clean water.
    Rub the chicken gently with salt and a little turmeric (optional) to remove smell and impurities.
    Rinse again 2–3 times until the water runs clean.
    Drain and keep aside in a strainer for 5–10 minutes.
  • Cooking Directions:
    Heat oil in a pan over medium flame.
    Add whole spices (if using) and let them release aroma.
    Add chopped onions (if included) and cook until golden.
    Add the titir chicken pieces.
    Stir well so the chicken is coated with spices and oil.
    Cook without adding water for a few minutes to seal in flavor.
    Cover the pan and let it cook in its own juices.
    After 10–15 minutes, add water if making a curry-style dish.
    Simmer on low to medium heat until chicken becomes tender.
    Stir occasionally to avoid sticking and ensure even cooking.
    Once fully cooked, adjust salt and seasoning if needed.
    Turn off the heat and let it rest for a few minutes before serving.
