Enjoy a warm, comforting Chicken Corn Soup made in the authentic Bangladeshi style. This easy homemade soup is light, nutritious, and full of flavor, making it perfect for quick meals or cozy evenings.

Ingredients

  • 1 tablespoon cooking oil
    1 teaspoon chopped garlic
20 grams boneless chicken (cut into small pieces)
    Salt (to taste)
    ½ teaspoon mixed masala
    1½ cups water
    1 chicken stock cube
3 tablespoons corn (canned, slightly mashed)
    2 teaspoons cornflour
    1 whole egg
    Fresh coriander leaves (for garnish)
    Fresh mint leaves (for garnish)
    Lemon (for serving)

Directions

  • Heat a saucepan and add cooking oil. Add chopped garlic and sauté lightly.
Add the boneless chicken pieces and fry them on a low flame until nicely browned. Add a small amount of salt and continue frying.
Add mixed masala and stir well. Cook everything together for a few minutes.
Pour in 1½ cups of water and bring it to a boil.
Add the chicken stock cube and let the chicken cook properly until tender.
Meanwhile, take the canned corn and mash it slightly.
Add the mashed corn into the soup and let it cook well. Adjust salt if needed.
In a separate bowl, mix cornflour with one whole egg and whisk well until smooth.
Once the soup is boiling, slowly add the cornflour and egg mixture while stirring continuously. This will thicken the soup to a gravy-like consistency.
Add fresh coriander leaves and mint leaves for aroma and garnish.
Once the soup reaches your desired thickness, turn off the heat.
Serve hot with a squeeze of fresh lemon for extra flavor.

Notes

  • The key to a good Chicken Corn Soup is balance. The sweetness of corn should blend smoothly with the savory chicken flavor without being too overpowering.
