Chicken Kofta Recipe Guide – Juicy, Flavorful & Healthy Chicken Meatball Curry Inspiration

Chicken kofta is a juicy and flavorful dish made with tender chicken meatballs cooked in a rich and aromatic gravy. This popular dish is perfect for those searching for easy chicken kofta recipes, healthy chicken curry, meatball curry ideas, and traditional kofta dishes.

Ingredients

  • Main Ingredient:
    500 g chicken (chicken breast, minced or finely chopped)

    🌿 For Kofta Mixture:
    1 teaspoon garlic and ginger paste
    ½ teaspoon black pepper powder
    1 teaspoon red chili powder
    1 teaspoon cumin seeds
    1 teaspoon chili flakes
    Salt (to taste)
    1 teaspoon mixed masala

    🛢️ For Cooking & Frying:
    Cooking oil (for deep frying)
    4 tablespoons olive oil (for cooking)

    🌶️ Whole Spices:
    4 cardamom pods
    4 cumin seeds (or a small amount of whole cumin)
    2 whole black peppercorns

    🧅 Vegetable Paste:
    Onion
    Tomato
    Garlic
    Ginger
    (blend into a smooth paste)

    🥣 Yogurt Mixture:
    2 tablespoons yogurt
    1 teaspoon red chili powder
    ½ teaspoon mixed masala
    Salt (to taste)
    Milk (as needed)

    🥜 Nut Paste:
    Mixed nuts (such as cashew or almond)
    Poppy seeds
    (blend into a smooth paste)

    Final Flavoring & Garnish:
    1 teaspoon brown sugar
    Fresh coriander leaves (for garnish)

Directions

  • 1. Prepare the Chicken Mixture
    Take 500 g chicken breast and blend it well to make a smooth minced (keema) mixture.
    Transfer the mixture to a bowl.
    Add the spices: 1 tablespoon ginger and garlic paste, 1 teaspoon crushed black pepper, 1 teaspoon red chili powder, 1 teaspoon cumin seeds, 1 teaspoon chili flakes, salt to taste, and 1 teaspoon mixed masala.
    Mix everything thoroughly by hand.
    Lightly grease your hands with a little oil and water to prevent sticking, then mix again until the spices are fully combined with the chicken.

    2. Shape and Fry the Kofta
    Heat enough cooking oil in a deep pan for frying.
    Shape the chicken mixture into small round balls (kofta).
    Carefully place them into hot oil and fry on medium heat until they turn golden brown.
    Remove from the oil and set aside.

    3. Prepare the Gravy Base
    In another pan, heat 4 tablespoons of olive oil.
    Add whole spices: cardamom, cinnamon, kebab chini (allspice), black pepper, and cumin seeds.
    Let them release their aroma.

    4. Add the Blended Paste
    Prepare a smooth paste using 2 large onions, 1 large tomato, 4 cloves of garlic, and a small piece of ginger.
    Add this paste to the pan and cook well on low flame.
    Stir continuously until the raw smell disappears and oil starts to separate.

    5. Add Yogurt Mixture
    In a separate bowl, mix 2 tablespoons yogurt, 1 teaspoon red chili powder, ½ teaspoon mixed masala, and salt as needed.
    Add this mixture to the pan and stir well.
    Add a little water or milk to adjust the consistency.
    Cook until the gravy thickens and oil rises to the top.

    6. Add Kofta to the Gravy
    Gently add the fried chicken koftas to the gravy.
    Mix carefully so the koftas do not break.
    Add a small amount of milk (or water if preferred) depending on your desired consistency.
    Cover and cook on low flame for about 5 minutes.

    7. Add Nut Paste
    Prepare a paste using cashew nuts and poppy seeds.
    Add 1 teaspoon of this paste to the curry.
    Mix well and cook for another 10 minutes on low flame until everything is well combined.

    8. Final Touch
    Add 1 teaspoon brown sugar (or regular sugar if preferred).
    Stir gently.
    Garnish with fresh coriander leaves.
