Belt fish curry is a flavorful and aromatic coastal seafood dish known for its rich gravy, tender texture, and bold spices. Popular in many traditional cuisines, this dish is perfect for those who love authentic fish curry flavors with a healthy twist.

Ingredients

  • 🐟 Main Ingredient:
    250 g belt fish (cleaned and cut into pieces)
    🧅 Vegetables & Fresh Items:
    1 cup onion (finely chopped)
    1 tomato (sliced)
    Spring onion (small amount, chopped)
    Fresh coriander leaves (for garnish)
    🌶️ Spices & Paste:
    1 tablespoon ginger, garlic, and green chili paste
    ½ teaspoon turmeric powder
    1 teaspoon red chili powder
    Salt (as needed)
    🛢️ Other Ingredients:
    3 tablespoons cooking oil
    A small amount of water

Directions

  • Before starting the cooking process, a few simple preparations will help ensure the best flavor and texture.
    First, clean the fish properly. Take 250 g of beltfish, cut it into pieces, and wash it thoroughly. It is important to wash the fish with salt, as this helps remove impurities and any unwanted smell. Washing without salt may not clean the fish effectively.
    Next, prepare the vegetables. Take one cup of onions (about four medium-sized onions) and chop them finely. Slice one large tomato into thin pieces, similar to salad-style slices. Then, take four stalks of spring onion along with some fresh coriander leaves and chop them nicely. Set all the ingredients aside.
    Now it’s time to start cooking. Place a pan on the stove and add 3 tablespoons of olive oil. You can use any cooking oil if you prefer. Keep the flame on low heat. Add the chopped onions and half of the sliced tomatoes to the pan. Stir them well and cook until they become soft, which will take about five minutes.
    Once the onions are soft, add one tablespoon of ginger, garlic, and green chili paste. If you prefer less spice, you can skip the green chili. Mix everything well and cook for about two minutes.
    Now add the spices. Add ½ teaspoon turmeric powder, 1 teaspoon red chili powder, and salt according to your taste. Mix everything properly, then add a small amount of water. Cook until the oil starts to separate from the mixture, which usually takes about two minutes.
    Next, add the fish pieces to the pan. Let one side cook properly before turning it over. After about one minute, gently flip the fish pieces to cook the other side.
    Then add one cup of water to create a broth. If you prefer a thicker curry, you can add less water. Add the remaining tomato slices, cover the pan with a lid, and let it cook on low heat for about 20 minutes.
    Finally, add the chopped spring onions and coriander leaves. Let it cook for another two minutes to enhance the flavor and freshness.
    Your delicious beltfish curry is now ready to serve.
