Chicken Coriander Lemon Soup Recipe | Healthy, Refreshing & Easy Homemade Soup

Chicken Coriander Lemon Soup is a healthy, easy homemade soup packed with fresh flavors and light nutrition. This refreshing soup recipe combines chicken, coriander, and lemon for a comforting yet zesty taste. Perfect for quick meals, weight management, and boosting immunity.

Ingredients

  • 3 cups water
    4 tablespoons chopped onion
    2 tablespoons ginger and garlic paste
    ½ tomato, chopped
    2 green chilies
    100 grams chicken breast (boneless)
    1 teaspoon cumin powder
    1 teaspoon mixed masala powder
    Salt to taste
    2 teaspoons coriander powder
    1 cup mixed vegetables (carrot, beans, and corn)
    4 tablespoons fresh coriander leaves (chopped)
    2 tablespoons corn flour
    1 cup chicken stock
    1 egg

Directions

  • Start by taking 100 grams of chicken breast. Wash and clean it thoroughly, then keep it aside.
    Next, finely chop the onion, tomato, green chilies, and prepare the ginger and garlic paste.
    Take a saucepan and add 3 cups of water. Into this, add the chopped onion, 2 tablespoons of ginger and garlic paste, chopped tomato, and green chilies. Then add the whole chicken breast to the pan.
    Let everything simmer on low heat for about 20 minutes, allowing the chicken to cook gently and the flavors to blend.
    Once the chicken is fully cooked, add 1 teaspoon cumin powder, 1 teaspoon mixed masala powder, 2 teaspoons coriander powder, and salt to taste. Let it cook for a few more minutes.
    Now remove the chicken breast from the soup and set it aside.
    Add 1 cup of mixed vegetables (carrot, peas, and corn) into the soup. You can also use any seasonal vegetables you like. Let the vegetables cook for about 5 minutes until they are tender.
    Then add 2 tablespoons of freshly chopped coriander leaves and let it simmer for another 2 minutes.
    Meanwhile, take the cooked chicken breast and shred or finely chop it.
    In a separate bowl, mix 2 tablespoons of corn flour with 1 cup of chicken stock, stirring well to avoid lumps.
    Add the shredded chicken back into the soup, followed by the corn flour mixture. Stir continuously to slightly thicken the soup.
    Finally, add one beaten egg slowly into the soup while stirring gently to create soft egg strands.
    Turn off the heat, add a squeeze of fresh lemon juice, and give it a final stir.
    Your warm and comforting Chicken Coriander Lemon Soup is now ready to serve.

    You can adjust the tanginess by increasing or reducing the lemon flavor according to your preference.
