Ingredients

  • Okra (Bhindi) – ½ kg
    Onion – ½ (chopped)
    Garlic – 2–3 cloves (chopped)
    Green chilies – 3 (slit in the middle)
    Salt – to taste
    Turmeric powder – 2 pinches
    Coriander powder – 2 pinches
    Potato – 1 (grated)

Directions

  • Take the okra and wash it thoroughly.
    After washing, place the okra in a sieve or colander to drain the water completely.
    ⚠️ Do not wash the okra after cutting, because it will release mucilage (the sticky texture).
    Once dried, cut the okra into medium-sized pieces.
    Take one potato and grate it finely using a grater.
    Chop onion, garlic, and green chilies. Keep them aside.
    Heat a pan and add cooking oil (here, olive oil is used, but you can use any cooking oil).
    Add the chopped onion, garlic, and green chilies to the hot oil. Sauté until fragrant.
    Now add the okra and stir-fry on a high flame. Cook until the stickiness of the okra reduces.
    Add turmeric powder and mix well.
    Add the grated potato and stir to combine.
    Sprinkle coriander powder and cumin powder. Mix nicely.
    When the mixture is almost cooked, add salt. Stir again.
    Cover with a lid and cook on a low flame for about 5 minutes.
    Once done, remove the lid, give it a final mix, and your delicious okra fry is ready to serve!
