Ingredients

  • 4 tablespoons cooking oil
    1 cup chopped onion
    3–4 garlic cloves, whole
    8 pieces shrimp (cleaned and deveined)
    Salt, to taste
    1 tomato, sliced
    1 teaspoon chili powder
    1 teaspoon coriander powder
    1 teaspoon cumin powder
    A small amount of water (as needed)
    ½ teaspoon turmeric powder
    1 cup grated coconut
    Additional water, if needed
    Fresh coriander leaves, for garnish

Directions

  • Take 8–9 large shrimp, clean them thoroughly, and wash them properly. Keep them aside.
    Slice 1 tomato and chop 1 cup of onion.
    Peel about 20–25 garlic cloves (adjust according to taste).
    Heat 4 tablespoons of olive oil (or regular cooking oil) in a pan.
    First, add the chopped onions and garlic to the hot oil. Sauté for a minute.
    Add the shrimp to the pan and fry them until they turn red and release a nice aroma (about 5 minutes). Remove the shrimp and keep them aside.
    In the same pan, add the sliced tomato. Fry it in the oil for about 2 minutes until soft.
    Now add the spices:
    ½ teaspoon turmeric powder
    1 teaspoon chili powder
    1 teaspoon coriander powder (optional)
    1 teaspoon cumin powder (optional)
    Salt to taste
    Mix well.
    Add a small amount of water and cook the spices until the oil separates.
    Add 1 cup of grated coconut. Mix well and fry on low flame for 2 minutes. Stir occasionally to prevent burning.
    Add the fried shrimp back into the pan. Mix everything well.
    Add a little water (depending on whether you want a dry curry or a gravy-style curry).
    Cover with a lid and let it cook until the shrimp are fully done and the gravy reaches your desired consistency.
    Finally, garnish with fresh coriander leaves.
    Serve hot with steamed rice, roti, or naan.
