    ½ teaspoon coriander powder
½ teaspoon mixed masala (garam masala)
    Salt, to taste
    ½ cup chopped onion
    2 teaspoons mustard oil
2 teaspoons fresh coriander leaves (chopped)
    ½ tomato, chopped
    2 teaspoons cooking oil
    2 cardamom pods
    1 bay leaf
    2 small cinnamon sticks
    Water, as needed

Directions

  • Take 1 whole cow brain and clean it thoroughly.
Mash the brain gently with your hand until smooth.
Add the following spices and seasonings:
    ½ teaspoon turmeric powder
    1 teaspoon red chili powder
1 teaspoon garlic and ginger paste
    ½ teaspoon cumin powder
    ½ teaspoon coriander powder
½ teaspoon mixed masala (garam masala)
    Salt to taste
Add 2 teaspoons mustard oil, ½ cup chopped onion, 2 teaspoons chopped coriander leaves, and ½ chopped tomato.
Mix everything well by hand and keep it aside for 5 minutes.
Heat 2 teaspoons of cooking oil in a pan.
Add the whole spices: 2 cardamom pods, 2 small cinnamon sticks, and 1 bay leaf. Let them release aroma.
Add the marinated brain mixture into the pan. Stir well.
Add a small amount of water and continue mixing with a spatula.
Cook on low flame, stirring continuously, so the brain does not stick to the pan.
After about 20 minutes, the water will evaporate, and the mixture will become dry.
Once the oil separates and the texture looks cooked, your Beef Brain Bhuna is ready to serve.
