Across Pakistan, India, and Bangladesh, goat head curry or Maghaz Masala is seen as a delicacy at festive gatherings. In the Middle East, it is prepared during large communal feasts where food is shared among families and guests, showcasing the importance of hospitality in Asian cultures.

Ingredients

  • Need 2 kinds of paste: 1. onion – 1, Garlic- 4-5 pcs, Ginger – 1 (5gm), green chilies 5-6, Tomato- 1 (blend it). 2. Fried onions- 5 gm, Raisins 7-8 pcs, Poppy seeds- 1 teaspoon. (blend it)
    One whole goat head, For gravy: yogurt- 2 tablespoons, 1st paste- 2 tablespoons, Salt to taste, Red chili powder – 1 teaspoon, turmeric powder- 1/2 teaspoon, Cumin Powder- 1 teaspoon, Coriander Powder- 1 teaspoon, Mix masala – 1/2 teaspoon, a bit of water for better mixing. Cooking oil 4 tablespoons, cinnamon- 2 pcs, Cardamon 4pcs, bay leaves 2 pcs, Cloves- 4-5 pcs, Chopped onion- 1 Cup, cumin seeds 1 teaspoon. Tomato 1. Whole green chili if you want, and Coriander leaves.

    Preparation Steps
    Cut & Wash Meat
    First, cut the meat into pieces and wash it thoroughly.
    Make the First Paste
    Blend together onion, garlic, ginger, green chili, and tomato into a smooth paste.
    Make the Second Paste
    Blend fried onion, raisins, and poppy seeds into a separate paste.
    Prepare the Yogurt Mixture
    In a small bowl, mix:
    2 tbsp yogurt
    2 tbsp of the first paste
    Salt (to taste)
    1 tsp red chili powder (adjust to taste)
    ½ tsp cumin powder
    1 tsp coriander powder
    ½ tsp garam masala
    Add a little water, mix well, and set aside.
    Cooking Steps
    Heat Oil & Spices
    Heat 4 tbsp olive oil (or any cooking oil) in a pan over medium-low heat.
    Add:
    4 pieces cardamom
    2 pieces cinnamon
    2 bay leaves
    4–5 cloves
    1 tsp cumin seeds (royal cumin recommended)
    1 cup chopped onion
    Cook until onions turn golden brown.
    Add Yogurt Mixture
    Add the yogurt-spice mixture (from Step 4).
    Mix well, add a little water if needed, and cook until oil separates and masala is well cooked.
    Add Meat
    Add the washed meat pieces.
    Mix well, cover with a lid, and cook for 5 minutes. (The meat will release some water.)
    Add Tomato & Water
    Add chopped tomatoes and ½ cup water.
    Cover with lid and cook for 15 minutes.
    Add Second Paste
    Add the fried onion–raisin–poppy seed paste (about 1½ tsp).
    Mix well.
    Add 1 cup water (or more if you prefer a thinner gravy).
    Cook Until Meat is Tender
    Cover and cook on low flame for about 30 minutes, until meat is fully cooked and gravy is rich.
    Final Touch
    Add extra green chilies (optional, for spiciness).
    Add fresh coriander leaves.
    Taste and adjust salt if needed.
    Now your Royal Spicy Meat Curry is ready to serve!
