Ingredients

  • Here’s a simple recipe to make your own Mix Masala at home:
    Coriander seeds – ½ cup
    Cumin seeds – ¼ cup
    Black peppercorns – 2 tbsp
    Cloves – 10–12
    Green cardamom – 8–10
    Black cardamom – 2
    Cinnamon stick – 2 inches
    Bay leaves – 2
    Fennel seeds – 2 tbsp
    Dried red chilies – 5–6 (adjust to taste)
    Sweet cumin 1/4 cup,
    Mace big 3 pcs,
    Nutmeg 1,
    Star anise 1

Directions

  • Dry roast the spices
    Heat a heavy pan on low flame.
    Add all the whole spices (except turmeric powder).
    Roast them gently for 3–5 minutes until fragrant. Stir continuously to avoid burning.
    Cool the spices
    Remove from the pan and let them cool completely.
    Grind into powder
    Add the roasted spices into a grinder.
    Grind into a fine powder.
    Mix in turmeric
    Add turmeric powder to the ground spices and mix well.
    Store properly
    Transfer the masala into an airtight glass jar.
    Please keep it in a cool, dry place. It will stay fresh for 2–3 months.
